If your transmission is working OK and not leaking at the pan, you can change the fluid by removing the dipstick tube. The torque converter also has a drain plug that is accessed by removing the bell housing shield and rotating the engine until the drain plug is on the bottom. Use type F fluid, about 10-11 quarts for a complete fill. All big blocks use basically the same gasket set except for the valve cover gaskets and the intake gasket.
