George: Just one more thing to check. You mentioned that you have installed a five bladed flex-fan. A number of years ago, I also replaced my normal fan with a flex-fan (on a non-MOPAR). They make them for both clockwise and counter-clockwise operation for different engines and they sold me the wrong one. I had much the same symptoms that you describe. Could your fan be trying to force the air forwards through the radiator instead of pulling it towards the engine? It might give enough cooling on the street at low speed but when going at highway speeds the incoming air would be fighting your fan. Just a thought.
