The only way to go with our cars is stated value/stated amount insurance. You pay a %age based on the agreed-upon value of the car. You butress your stated amount by getting an independent appraiser (an officer of the 300 club would probably be enough to satisfy the insurance companies) to state the apprased value (based on B-J amounts, Price Guides or whatever). While exact models of lost Rolex watches can be replaced by common means, what about that rare Louis XIV highback chair in your living room ? You can't exactly go into Walmart and buy a replacement. That's why there is an agreed-upon value.
