Replace your point style voltage regulator with a solid state type.  I think
John Hertog has some available or check with a good parts house.  It will
eliminate the jumping needle on the ammeter.

What is a suggested cause for a bouncy amp gauge in my 1962?

The car always retains a charge, though when at both idle and under load,
going down the street, the gauge itself bounces all over the place.
