Dennis, Stainless is always harder to work with; whether you are ordering pre-bent (which always needs something re-bent), or having it custom made, it is just less agreeable to going where you want it to go. Stainless systems have somewhat of a harsh tone to them; they resonate differently. Increasing diameter means you risk proximity to crossmember, frame, rear shocks thereby increasing the possibility for rattles. 300Cs and Ds could be ordered from the factory with full 2.5" systems front to rear however. Do you risk criticism from some members? Absolutely if it isn't dead factory stock. Might you get praise from some other members? Absolutely from those not concerned with judging points. My personal recommendations would be aluminized pipe in the original diameter if you ever intend to show in 300 concours or 2.5" aluminized pipe if you want to be your own man about your own car. But in my experience, stainless is not an option, and rusting mild steel OEM-style pipe is a waste of re$ource$.
