  Both going up uphill and sudden opening of the throttle will cause a major decrease in engine vacuum. This will then cause the breaker plate in the distributor to move as the timing is retarded. Have you checked to find if the wire to the points is good and is not slightly separating when the breaker plate moves. Is the screw that holds the wire to the points tight?

  Was initial timing set with the vacuum line to the distributor disconnected(this is required when vacuum signal is continuous when the throttle is closed,,,non ported). If not disconnected at timing set time, it is possible that you are running with severely retarded timing when the throttle is opened and vacuum decreases, which could cause engine to stall.

  Is exhaust system stopped up in anyway?

  What carb are you running, likely a Carter?? Holley's have a power valve that opens to enrich the mixture at low vacuum. I do not know mechanism in Carter to do likewise, but it certainly must exist. If this system is failing, this might cause your condition.

  Fuel pump pressure or volume ok? Bob J's idea on fuel filter is another. Float levels ok(3 time carb rebuild they better be!).

  Coil ok? High cylinder pressure from sudden acceleration with weak spark could blow out the fire. Ignition switch and ignition wire to coil ok?

  Did this problem begin suddenly or had you made some change to something and then it began? What was situation leading up to the problem. Was all well and then failure?

  Gas ok, no water in it?

  Put a vacuum gauge on engine, how much vacuum at idle and what happens when you suddenly open the throttle(before engine stalls).

  My best guess of all above is distributor or wiring to it or power circuit in carb. I did not read all the prior responses, so if some of my thoughts are repeats, please disregard.

  If the carburetors were rebuilt properly, and if there is adequate 
  fuel squirt from the accelerator pumps, it should not be a fuel 
  starvation problem between the tank and the carb inlet. It takes a 
  short while to empty the float bowls and the engine is dying on 
  acceleration from idle. You could fill the carbs, disconnect the 
  fuel line and probably drive several hundred feet before the engine 
  died. To eliminate the carbs as a source, trying known good ones is 
  best, but obviously that may not be readily possible. When the 
  engine dies, does it backfire? There may be known specific issues 
  with ram cars that could cause this.

  The car must run down the road or you wouldn't know that it won't go 
  up the hill. How is the power and response when accelerating 
  slowly? Will the car run up to speed and will it go up the hill with 
  slower application of throttle?

  I would still verify that the distributor's mechanical advance is not 
  stuck, being retarded will suck everything from an engine when accelerating.
