Unless the flash chrome has gone bad you get a much better shine with it 
still there.  The chrome protects the stainless and gives added depth to the 
shine.  If it has been ruined though you can take it to chrome shop to be 
removed and then be replated or mechanically remove it and buff the piece. 
Could of course just have plating shop remove it and then you or they polish 
it.
