Sounds like you have an air bubble in the system. Run the car cold with cap off and the heater open. As it heats up, watch in the filler neck as the coolant flows. Eventually, it will settle out, find its level, and then you can add coolant to top it off. Rev. it up during this process, just to increase flow and push out any trapped air. You may have to add some as the car heats up and the air finally escapes. Also try giving the big hose at thermostat a few squeezes to push the air out of the thermostat area. Make sure the overflow bottle (If you have one) is filled up to the Hot level You might also change the Cap if it's old, They get weak over time and don't work as they should.
