Joe, I have done this a few times and can say that it is much easier and the results are much better if painted when the grill assembly is out of the car, laying flat. I used the touch up paint from my white G. I put a touch of thiner into the paint to make it flow better. Then, I wait for the paint to be pretty tacky after filling the letters. When it is in this state, I use a thinner soaked rag wrapped tightly around my figure to wipe off the excess that got outside of the letters. The medallion can be held in place with just simple silicone sealer such as used with gaskets. Have fun.
