Whenever I came across engines never previously torn down they also never had exhaust manifold to head gaskets. The rebuild kits supplied them and as a teenager I remember being told that the metal side goes to the manifold since it gets hotter than the head. That's the way I've been assembling them. Also, over the years I've found warped manifolds that needed surfacing both on the cylinder head side as well as the pipe flange side. Actually trying to get an exhaust leak fixed on my Charger in time for MoPars at the Strip next weekend.
