I agree with John. I had a rebuilt steering box on my 62 from Firm Feel. Like you, my car was all over the road. The steering box adjustment was way to tight. Brought my car to an old school Chrysler guy and he took my car for a test drive and knew right away that the box was adjusted to tight. Alignment was also off. Make sure tire pressures are also equal - I run 32 psi - higher seems to be better than lower. Also check sway bar bushings. Don't forget that the steering on these cars was never "tight". Steering wheel always wanders a bit. Unlike todays vehicles which seen glued to the road and require no actual driving skills, you have pay attention and actually DRIVE these old beasts.
My experience anyway.

Dave,
Welcome to the list server. Check the front end for worn parts, replace as needed and have it aligned. You want the most caster you can get, as that will give you the best possible handling with radial tires. In other words, emphasize maximum caster first, then camber and toe-in. If you don't have a factory service manual, you need to get one, for '61 you'll need the '60 and '61 supplement, they work as a set.

Hi As a new member and owner of a 300 I have many questions. First I hope I am doing this right? I have a steering problem in that I can’t hardly control the car as it’s all over the road. New Coker radials. Where do I start figuring out the problem? Dave Nussdorfer
