Nick,
I don't know how many single-headlight Cs rolled off the assembly line, but some were produced. Some states weren't yet onboard with licensing dual-headlight 1957 cars, at least at the beginning of that '57 model year. I was only 8 then, but I recall Tennessee being one of those states.
