Should be a 180 degree thermostat with the regular green ethylene glycol; if you want a Napa part its #191.  I normally drill a 1/8” hole in it but to each their own…
Hoses used to be softer rubber with a spring as John mentions.  If the springs rust they can collapse especially at high rpm’s.  Nowadays they use stiffer rubber that supposedly doesn’t collapse even with no spring, at temp.   Bottom hose for the car depends on the radiator you have and its outlet diameter, but for Napa this will be 7648 for the smaller diameter or 745 for the larger.

Thermostats do not control the top temperature, they merely begin to open at the listed temp. A stuck thermostat can cause overheating, it would happen rather quick too. I would think a 180 degree stat is appropriate for our cars but I'll leave that to critique by those older and wiser. 

 

Overheating at idle and low speeds is usually an air flow matter related to fan shroud placement, radiator support seal, fan blades properly distanced from core, or fan clutch. 

 

Overheating at high speeds is usually water flow issues, collapsed hose, plugged radiator or rusted away pump impeller.
