IT is likely that through vibration the adjusters have backed themselves off. That will cause the pedal to go a long way down. Check for lining thickness of the shoes and adjust them to spec. Try that before changing much else. It appears that yo have done a great deal to the brake system but you dod not mention adjusting them. Check the adjustment on all four wheels. Keep us posted.
