I am up against the same problem, so here is how I'm doing it: I'm rebuilding the front ends on my 64 Sport Furys this winter, converting to disc brakes at the same time. I'll toss all the old parts, except for the brake drum assemblies. It would be nice if I could figure out a use for the old torsion bars and strut rods, but they will probably go to the recycler. I have an old gas tank that's all dented up and several patches. It's going to the recycler as well. I never toss a piece of trim, switches, or body pieces.
