Some (not all) classic car ins companies will cover a car when it's not on the road, but under restoration. I believe Heacock & either Grundy or Hagerty will. Call them and ask them. Another easy way to do it is to leave the registration current and leave the insurance on it. Both should be cheap if you register your can as an antique or classic in your state.
