Wow, what a cool car. Yes, white leather with black cloth was available, as you found out. I can try to scan a page from the color and trim guide (but not this week, most likely). In a white interior, the dash pad was indeed black on top and white on the bottom. The assist handle on the passenger side is correct for 1967 only. (It was deleted during the enlargement of the dash pad for 1968.) Love your biological descriptions of the car parts!! I have never seen anyone with the Tensor lamps, only pix. Don't know why they never seemed to stay with the car. The curse of things that plug in is that they unplug, too. I knew someone that lost the headrests to a relatively modern car, so anything is possible! Please take pictures before, during and after. This is going to be a stunning car!
