Nick, I would start with the thermostat. If that does not do it you may be looking at a radiator. I once had a 68 Buick Skylark, (24k, garaged kept original miles in 1984, looked like it was stored in a glass jar, should have hung on to that baby) took it to Florida for spring break when I was in college. The car always ran hot at idle and in traffic but the radiator looked pretty gook. Anyway when the overheating got worse on that trip I tried replacing the thermostat, then removing it altogether .... nothing helped. Turns out that a number of the internal passages in the radiator were plugged and the only solition was to re-core it.
