Jumping in with my two cents a bit late here. I painted a set of 383 exhaust manifolds with white VHT manifold paint back in about 1986. (The only prep was with a steel brush and some solvent) The paint lasted for several years of daily driving in a wet climate here in Vancouver. After sitting for years after with occasional use, the manifolds still looked presentable other than some areas down low that had discoloured and finally burned off. With better prep and an occasional touch up, I doubt you would need to over-think this to keep your manifolds looking new, especially with a more forgiving colour like 'cast iron'. Cheers. I used the new one that Eastwood has. It comes in a rattle can but has a hose with a Fan nozzle You slip the hose and nozzle down the exhaust pipes and manifolds . When you start spraying you slowly pull the hose and nozzle out. Then you heat the pipes and to help dry the coating. My dryer was a Hemi engine exhaust. The coating looks good But it will be awhile before I see the results. How do I know? I measured mine with an infra-red heat gun, They ran about 650 degrees F. There are several manifold coating products that work well and won't burn off, as Bill's link shows.
