 Andy, 
  Your current transmission has a different sized front pump than the
later year transmissions do. I believe you can buy a balancing flex plate
to use on the 360, and then use a "unbalanced" torque converter. Maybe
the one in the car now?
 The poly 318 manifolds are not interchangeable with the 360. The later
model 360 manifolds could be used, but plumbing an exhaust system might
be a royal PIA. The headers would probably be the best choice, right now.
Exhaust system will be easier, and sometime in the future, you could
always sell the headers to someone else. Tom
