Since I bought my '64 Polara 4 door about 3&1/2 years ago I have seen them fairly regularly for sale. Mine was $1500 and I've seen them as low as $500. But something starting to get nice can be found more into the $4k - $10k range. I think with perserverance and desire you'd be able to find one. If you are not flexible as to style/model it may take longer. I'd have preferred a 2 door but there are advantages to 4 doors aka access for old codgers and "stealth". I love the '64 Dodge "barbell" grill style especially. We don't get all our money out of a car when we sell them so it's probably cheaper to buy one that is ready but you miss out on the "doing" and the expense is all at once. However, if you can tow the whole works it'd relieve some stress knowing you have one. You'd lose money selling all your "goodies" that you have stashed for the poly. I'd save the engine/trans and at least the components even if you sell the car. They can be used on a wide variety of models later. You may find a nice body with a bad engine/drivetrain. 

I think I'd be prone to tow it all. And keep my eyes open for a nice body and part it out here if the cowl, etc., is too pricey to fix or too difficult for you.
