I don't see why not. A 360 is the same size physically as a 273/318/340. 
You'd have to use an externally balanced flywheel though. From what I've 
read you'll probably have to use the 64/66 exhaust manifolds, although I've 
heard of modifng 68-up A Body 340 manfolds (driver's side).
