I think running at 200 is better for the engine.  I've taken apart many 
engines with no thermostats to find an incredible amount of sludge 
inside, which is missing on engines with a hotter thermostat, 
especially.  The additional heat is needed to boil off the gasoline that 
gets in the oil past the rings from normal operation, particularly in a 
carbureted engine.  I imagine moisture needs to be burned off, as well.

For instance, my off-topic 1969 Fury with stock 318 calls for a 195 stat 
(as do ALL 1969 Furies, regardless of engine), 16 pound rad cap, and 
came with a fixed, little four-bladed fan, and the smallest radiator I 
have ever seen in a Mopar.  The radiator is MUCH narrower than a 22" 
standard radiator, and I have only seen these otherwise in slant six 
cars.  Yet, in hot traffic, the temp gauge won't go past about one 
third.
