Anyone know who might make an aftermarket bolt on carb for a 56 firedome with a 330?

You can use a Carter/Edelbrock or Holley 4bbl carb if you use an adapter. They make adapters from the small pattern 4bbl as well as the 2bbl, although the 2bbl to 4bbl adapter isn't as efficient.
However, if you would like to juice up your engine a little bit, I would recommend purchasing an aluminum intake manifold from Hot Heads. That way you wouldn't need to adapt anything.

I’m just trying to get it running smooth and have been battling with the Carter carb. Gets to about 40mph after it’s warmed up then wants to die. Starts and idles fine.
Just cleaned the gas tank and had the fuel pump re built. I realize the older carbs are an art/science and I’m just not savvy enough for it so was looking for a another solution

That sounds like a restriction in the fuel line. It might not be carb related. That happened to me with my Barracuda. I eventually disconnected the line at both ends and blew out the restriction with compressed air. Your restriction may be from the filter or some other place as well.

I have blown out the fuel line once or twice. There is a small "kink" just where it bends just after the line comes out of the tank, just didn't think it was severe enough to restrict the fuel. I did have the carb re built last year maybe something went wrong there.

Thinking of just running a line from a small gas can to the fuel pump thereby by passing the tank, maybe that will tell me something

That will help narrow things down. To add, I have seen that carb having been rebuilt and the wrong needle and seat installed, changes the float drop and the fuel bowl capacity is reduced.

Just a thought, although the tank has been cleaned , the filter in the tank is non removable, and i did encounter the same issue , clean tank but a pile of dirt around the filter/strainer.
i had to cut a section out of the top of the tank to get into it clean it , all good now.

Just noticed the screws for the choke adjustment were super loose, I tightened them seems to run better but will trouble shoot the tank more
