What I normally do and see done (assuming you don't need the car to be driven for a while) is get the body finished first, then move on to the glass, rubber seals, etc, then the interior and electronics. Then the fuel, exhaust system, brakes, and lastly the engine & tranny. 'course I've also seen times when the engine & tranny are done first... but when I've seen that, it's normally when a special hot rod engine setup is being built and the car is obtained after the engine & tranny is done... that way it just gets "droped in".
