Charlie, I built mine 40' x 60'. It was huge, but somehow, in 10 years I have managed to fill it to overflowing. :-) My building is made from curved steel, very similar to a Quonset hut from WWII. If you go that way, be sure the vertical sides are tall enough. Mine are about 5' tall before the curve to the roof starts, too short. Storing lockers or shelves against the side wall you lose a little because they can't get flat against the wall. My shop is 16' at the peak, that is a good height for the heat in summer, but be sure you have a way to reach the top inside if needed. I have 12' tall doors, that is also good for moving A frames, etc. in and out. Make sure there is a smooth transition into the doors in case you are moving a dead car or that A frame with steel wheels. One thing I did not specify was an under floor drain system, I highly recommend that. I would also put anchor points strategically placed in the floor to help moving dead cars and heavy items with winches or come alongs. That's all off the top of my head.
