Gaskets will fail, no gaskets (like Chrysler intended) will not fail. I’ve run gaskets before and eventually they burn out.

I use 7/16-14 stainless bolts and locknuts for the manifold-to-pipe connections.   Not saying they’re better, but hopefully easier to remove them in the future than the (usually) horribly rusted carbon steel bolts and nuts you often run into.

I searched the parts book and it is a little vague to me. Do the single carb 360HP engines use exhaust manifold gaskets, or not? The parts book calls for them for the ram and hemi engines.
